Pilot research / meat businesses
Know where it came from.
What happened to it.
And where it went.
Operational Truth.
At ERGORYON, we are exploring a clearer way to connect receiving, lots, cutting and destinations in one history.

01 / DAY-TO-DAY OPERATIONS
The records exist. Are they connected?
Information about a lot may be in supplier documents, labels, invoices, handwritten notes, worksheets, ERP/POS — or in the knowledge of staff.
It is not just about having the information. It is about being able to answer when needed:
- Which supplier and receipt did it come from?
- Which lot was cut, and what came out of it?
- Where were the new lots stored and moved?
02 / OPERATIONAL TRUTH
Stock shows what is there now. Connected movements show how it came to be.
One input lot, two output lots and the records that follow them through to dispatch.
03 / TRACEABILITY
Records, connected and available when needed.
In the EU, food traceability is required at all stages of production, processing and distribution. Businesses must be able to identify suppliers and businesses to which they supplied products, and make the relevant information available to the competent authorities when requested.
For beef, additional labelling rules connect the meat to an animal or group of animals and to slaughter, cutting and origin information.
ERGORYON is being designed around these real needs for recording and investigation. This is a product direction, not a certification or guarantee of regulatory compliance.

04 / RECALL
If you need to trace a lot, do you know where it ended up?
The essential question is what came out of the affected lot, where it moved and which records support that journey.
05 / PILOT
We want to test it in real conditions.
ERGORYON is taking shape. We want to speak with Greek meat businesses about how they handle traceability today and, where there is interest, test it in real workflows through a pilot collaboration.
